When A Muffin Turns Into A Mess

Posted by Moms Fun Money on Tuesday, March 24, 2015, In : Recipes

I was in a baking mood yesterday. I am the kind who has 2/3 of her cookbook filled with recipes for desserts! I had recently torn a page out of a magazine for a new jam filled muffin. I looked and had all the ingredients so I set out to make them. Once the dough was done I realized I had enough to make more than the 12 the recipe called for. But trying not to make too many I stuffed those cupcake liners and ended up with huge muffin tops, yum!

I waited patiently for them to cool a few hours a...

Fall Recipe - Adorable Owl Cupcakes

Posted by Moms Fun Money on Sunday, October 13, 2013, In : Recipes

Just another oldie but goodie Fall recipe that I wanted to share.

*Bake regular cupcakes - I made chocolate but you could make any flavor you want.
*After they are cooled I iced with them chocolate icing. Add a tiny amount of chocolate icing at the top of the cupcake as ears - not super easy, but not rocket science
*Now for the learning curve :)  I bought Oreos and assumed that with a knife I would be able to cut them in half and have half the icing on each side of the cookie. Let me tell you,...

Posted by Moms Fun Money on Sunday, May 19, 2013, In : Recipes

I lost 30 pounds last year, and am trying really hard to keep it off!  My father visited for his birthday yesterday and I wanted to make him a cake, but not a regular fattening cake.  I found a recipe for Angel Food cake online and thought I would give it a try.  I had never made it from scratch, and I have to say it is 100% times better than any store bought angel food cake I have ever eaten.  Click HERE to see the original post.  The only thing I will point out is that it takes 12 egg white...

Chocolate Chip Scones

Posted by Moms Fun Money on Saturday, November 10, 2012, In : Recipes

I just love scones, but for some reason I do not make them that often.  This week I had a craving for them and I know that one batch goes really fast in my house.  So, I had my daughter, Haley, make a batch as well.  I will take all the opportunities available to bond with a 16 year old :)

I have tried a few different recipes in the past, but I still love the Bisquick recipe:

Chocolate Chip Scones

2 Cups of Bisquick
1/2 cup of Chocolate Chips
1/3 cup of Heavy Cream
1 Egg
3 Tablespoons of Sugar

I made three different sizes (4",6", 8") of round cakes, 2 of each size. I used Duncan Hines boxed cake mixes. I did one box of each in chocolate and in yellow. I added a little blue food coloring to the yellow cake mix to give it a green color to go with the theme...

In the Kitchen With Janice

Posted by Moms Fun Money on Wednesday, August 24, 2011, In : Recipes

I love Mexican food, especially when it's homemade. The other night I made one of my favorites, chicken and cheese enchiladas with guacamole. You should start by making the enchiladas first, you can cook up chicken just for this or use left over roasted or fried chicken. You could make the guacamole while the enchiladas are baking.
One way to pick out a good avocado is to very lightly squeeze it. If it gives a little, it's ripe enough to use; no give, then it's not quite ready. A trick my da...
